Yeast Donuts vs. Cake Donuts: What’s the Difference?


If you’ve ever stood at a donut case wondering “Should I get the fluffy one or the dense one?” — you’re not alone. The two most common styles of donuts, yeast donuts and cake donuts, look similar at first glance but are actually very different in texture, flavor, and how they’re made.

What Are Yeast Donuts?

Yeast donuts are made from a dough that uses yeast as a leavening agent, similar to bread.  


The Process

The process of making yeast donuts is more time consuming than cake.  This because yeast dough requires exact measurements of ingredients, correct temperature of the ingredients, strict order when combining them into a mixer and kneading until the dough has correct consistency and “window pane” properties.

Once the dough is mixed properly, it must be “tabled” for a specific amount of time so the yeast and interact with the sugars which causes the dough to form air pockets and raise.  This takes around 40 minutes.

The dough is then divided into more manageable bundles and kneaded again.  It is left alone or tabled for another 10-20 minutes to raise more.

The dough is ready to be work with to make individual donuts.  A bundle is places either on a table and rolled out to a thickness of about 1/4” or placed on a dough sheeter which is must faster.  Once the desired thickness is achieved, donuts are cut by hand with donut cutter and it is place on a frying screen in batches of 25.  The screen of 25 donuts are then placed in a temperature and humidity controlled proofer.  Here the donuts take their final shape and size which takes from 20-40 minutes.  Once this is done they head off to the fryer.

This process creates donuts that are light, airy, and fluffy.  These, as you can see do cost more than a cake donut due to the time and energy used to create them.

What Are Cake Donuts?

Cake donuts are made with a batter, not dough, and are leavened with baking powder or baking soda instead of yeast.


The Process

The process for cake donuts is a much faster and easier process.  It involves first typically combining just 2 ingredients, a special mix and cold water.  These ingredients are added to a mixer and processed for only about 90-120 seconds or until the batter is consistent and smooth.  Some cake donuts flavors require a little more attention to the temperature of the water than others.  Case in point, old fashioned (aka sour cream) cake donuts require a colder water temperature than others cake donut flavors.  The colder water old fashioned batter when it is added to the water allows for the donut to form its special “crown”.

So how does the cake donut batter gets it shape?  This is accomplished with a donut hopper and dispenser system that is hand cranked that form a donut shaped dough when dropped in the oil.

The result is a donut that’s denser and more structured.
